Chinese Barley Salad

Everyone loved our delicious Chinese barley salad at the Summer Qi Festival.

Here’s the recipe for you to enjoy!

* Good for Stomach
* Lowers cholesterol
* Aids digestion


2 cups of Chinese pearl barley
6 cups of water
4 tablespoons Real Mayonnaise
1 diced small apple
1 diced scallion
2 stalks of celery diced

Orange Marmalade (approximately 1 to 2 tablespoons to taste
Handful Cranraisons
Feel free to add or substitute other fresh fruits and nuts.

1. Rinse barley thoroughly
2. Place barley and water in a pot and bring to a boil.
3. Lower to heat medium and simmer approximately 1 hour, stirring occasionally.
4. Drain water from the barley and allow to cool completely. Or refrigerate to speed cooling process.
5. Once barley is cool, add the rest of the ingredients and mix.
6.Chill and serve.

  3. Going to a family reunion on Sunday. I am going to introduce the family to Barley Salad. Last year the “older Aunts” introduced Health Awareness and Prevention, this year we will feed them.
